Recipe for 6 portions

6 Belgian endive leaves separated
1 mango
1 navel orange
1 blood orange
1/2 red onion
1/2 pineapple
1/2 bunch cilantro
6-12 small shrimp
4 garlic cloves, mined
1 lime (optional)

Finely dice onion, pineapple and cilantro, combine and set aside
Peel and segment the orange, finely chop and remove extra flesh, then add to mixture
Season mixture with salt and if desired zest and juice of 1 lime
Crush garlic and add to shrimp then cook until pink
Remove shrimp from heat
Place roughly 1 tbsp mixture on one endive leaf
Top with 1-2 shrimp
